Hand luggage - How big?

it varies a little from airline to airline.
And it varies a lot how much you can take. For example, with Singapore Airlines you can take a bag (fitting their dimensions), a handbag, a camera, a laptop, a coat, a reasonable amount of reading material (and a few other bits and pieces I can't remember). But not all airlines are this generous.
Go to the web site of the airline you're flying with and have a look.

I looked at the BAA website:
BAA Website
I have a friend who works at Heathrow and she has told me that despite what individual airlines say BAA can override this and she has seen them only allowing one piece of hand luggage each - so laptops etc have to go inside the one bag. So you may be ok if flying from a different airport or maybe some people get through and others dont. The link above gives you the actual sizes as well and good info on what you can and can't take.

What it doesn't say is exactly what classifies as 'hand luggage.' Would it be possible to just bundle several bags into a bin liner for security, and then take it out at the other end?

Yes, this is true. Any individual bags that you have must be able to fit into the one piece of hand luggage. This includes cameras, laptops, handbags etc.

What BAA don't say is that you can't take a coat with lots of pockets and stuff them with all the stuff that you can't fit into your hand luggage...
Another thing you should do is check that any liquids bought at duty free can be taken onto subsequent flights if you're connecting somewhere. Speak to your airline about this as BAA will be clueless or will lie to you as BAA get a cut of everything sold in the airport so it's not in their interests for you to buy less.

Also don't forget that you are only allowed to take toiletries onto the plane that are 100ml or less.
