It was 2.70 last night, now it's 2.65 ho do you explain that one eh .......

Watching these fluctuations is probably not good for your sanity, plus you have no influence over it. Better to remember that you are getting more value for your £ by converting it whether it be 2.5 or 2.9. A 10 or even 20% currency fluctuation won't change your life in any way that you would notice, however actually moving to Australia and living in a new Country IS a lifechange that you WILL remember.

I agree with yoru first sentence entirely. However, you must also remember that many people coming over here (and a few that are going back) have changed all their worldly assets - including £££s from those expensive UK houses, so a 20% fluctuation in the exchange rate will make a BIG difference.
