The only reason you will need to pay for anything on the flight is if you buy Duty Free, which is usually done with plastic anyway.
Food and drink is free.

What would you be buying on the flight??? I asume you are talking about Duty Free things, if so they will usualy take most major currency, and also the currency of the country they are going to and coming from.

Airlines now will not accept any currency for payment of Duty Free goods for security reasons, credit cards are a necessity. If you tender cash, it will only be accepted in stores on the ground in the airside shops, then you will receive change in that country's currency, if they will accept foriegn currency at all.
