Big Banana Country
Seems quite a scenic area ... have driven thru a quite a few times (enroute between Brisbane and Sydney and vice versa) ... the mountain backdrop gives it a 'tropical' feel ... stayed once in the nearby town of Bellingen ... seem to remember visiting Waterfalls ...
I think property would be reasonably priced in Coffs or Port Macquarie, or any of those places mid way between Brisbane and Sydney, work opportunities may be more limited than in a State Capital.

We stayed at Coffs for a few days- at Pelican Beach Hotel. It was a lovely area , the sea is a vision of blue and the people are really friendly. The shops etc were not up to much though.
A great place to live, lots of Sydneysiders visit for a weekend break, It apparently has the best climate in the whole of Aus.
On the whole beautiful, but I would have though jobs would be limited depending on your profession.

Thanks for the replies.
My hubby is a fitter/machinist and in Coff's Harbour there are 168 manufacturing business,we have found quite a few jobs that would suit him (see website:-http://future.coffs.com.au ).
When we went 3 weeks ago we stayed at Woolgoolga and found the people great and the area was beautiful not to mention the weather.
We were intending to start our new life in Adalaide but we are so impressed with Coff's that we are looking into this part instead.
