I worked for years doing casual work for Australia's largest catering company, Spotless. (A division of Spotless Services) They have an in-house staffing agency (or at least they used to) called Allmark Personnel.

I did bar and waiting work at various sporting events around Sydney. I thought that is was well-paid for what it was, and great fun.

They are actually in all over Australia....you could start with them in Melbourne, which would get u in the door for sydney. They also run some mining companies' "towns/camps". They used to operate the different state offices as though they were different companies though, so you'd have to repeat the paperwork, but worth it I reckon.
