On our way to Oz we have a stopover of 3 hours in Singapore Airport.
Will we need some Singaporean money or will they take Sterling/Australian
Dollars?

We paid in sterling at a shop for 2 drinks, but were given change in Singapore dollar, we were also about 3 hours, probably not worth worrying about getting any Singapore currency.

There were change offices there where you could exchange your money. We only went to burger king and we paid by credit card there.

They will take credit cards for just about everything, even one beer! They will also take notes, Aussie or Uk (or others I guess!) but use the smallest denomination you can as your change, like ScuntoBris said, will be in Singapore money.
I'd use cards, much easier.
