if your going to VIC - you have heaps of choices - St Kilda's has those open markets (at least I hope they still do) - fab delicatessens - lots of variety cured meat and cheese wise!

Don't worry mate. You can buy your tasty cheese pre-grated out there. No more tiresome grating for me when i want to create a gourmet cheese on toast
From what i saw out there, you can get quite a few varieties of fromage. Even Bi-Low in Mount Gambier (pop 25k) had a couple of different blues. They were damn expensive though....
Only cheese i did'nt see, that i am hoping i will find in a deli or somthing is Brie. Its my favorite.....so i pray i find some !!
