Default ANZ Mortgage- changing to a fixed rate?

I would like to change our mortgage to a fixed rate one for up to 5 years. If this is still possible how do I do it? Do I have to go in and wring my cap to the manager at my branch or can I do this over the phone with the call centres?

I'm still getting used to the banking here.

We did a similar thing with the ANZ, but had to go into our local branch to sign a few documents. Very easy and straightforward. However! Somehow they managed to take out payments at fixed rate and at old rate, essentially doubling our mortgage payments! Easily sorted, but made the first bank statement a bit scary!
