Daughter lives in Sydney - too dear to live unless you have bucketloads of cash or a good job! So we looked at properties in the Blue Mountains and the Hunter Valley ( we ( the family) plan a venture which needs tourists!)
What I suggest is this, for 3 nights, assuming you can be in/around Cessnock before midday, you will see the first "cafe" near the "i" tourist info signs.
They will have accomodation details posted and any special offers.
On the road into Cessnock you will see at least one motel. If you are wary..they will be pleased to let you view the rooms before you commit. Sort your first night out and that gives you time to look around if you are not happy.
We prefer to look at accomodation rather than book online and get stuck with it. I dont think you will have a problem finding a good place. Look for the tourist info signs and there are about 3 "estate agents" in Cessnock, ask them for info...they will be very helpful.

Its just north of Cessnock and ideally placed for the Wineries and the beaches are about 50 minutes away as is Newcastle which is being tarted up and made touristy.
Its in the list put up by Vash - check it out.
