I've not been able to find "raw" hams to cook at home. I can only find ones already cooked

You can get smoked uncooked hams in the US but most Americans don't prefer those.

I have to say, I don't fully understand what makes 'ham' 'ham' ... I presume you start with a pig, and then you cut it up, and then you either make 'pork' or 'ham' (or bacon) with a specific cut; the ham/bacon route being a curing method. So is there such a thing as 'raw' ham ...

Cured, but not precooked, I think. Many of the hams you find in the stores out here for roasting are pre-cooked, all that is being done is heating them.

The ones that are uncooked are generally in bags like the pictures above and probably say "country cured".

I think that a "raw" ham is a pork joint that has been soaked in a curing brine. The meat then looks reddish-pinkish, very similar to raw bacon, so therefore is clearly "raw" (not cooked). If you buy a raw, but cured, ham, you can boil or bake it, turning into a cooked/baked ham that is pale pink. ..... If you start off with a joint that has not been cured you'll just end up with a boiled or roast pork joint.

Publix have them around the holiday season. If you don't see it on the shelf ask them. I bought one last Christmas.

That's it exactly - a joint that has already been cured but not cooked. I will check out publix and keep an eye open for cloth baggy hams
