For an employment-based Green Card, you are supposed to work
"permanently" for the employer in the same way as you would in any
other "permanent" job. Your decision to work there 'permanently' seems
to be assumed to be made at the time you file your I-485, and in
general the assumption seems to be that it's reasonable to move on
from a 'permanent' job after 6 months. So, if it's at least 6 months
since you filed your I-485, it's very unlikely that the USCIS would
worry about your moving. Less than that and you're at risk of the
USCIS determining that your application was not in good faith and
withdrawing the Green Card. The risk is small though.

None of this has anything to do with legal rights of employers over
employees though, it's between the employee and the USCIS. I suppose
an employer could make a point of stirring things with the USCIS if
you left very quickly, but that's about it.

If you "sign something" you may give the employer some legal rights
over you depending on what you sign, of course. That's not related to
immigration law though.
