Default How to use a Weber BBQ

Hi folks, today I'm attempting to use a weber kettle type bbq for the first time,
I had a bit of trouble getting it lit but eventually i cracked it after my mate lent me his Quickstart chimney.

My question for anyone who has wanna these things is when do ya put the bloody lid on. I picked up a big book full of recipes and stuff for the kettle bbq and it keeps telling me not to put the lid on yet, no, don't put it on yet!
But what it doesn't tell me is when i SHOULD put it on.

Any clues,tips or tricks you tricks you fella's would like to share.
I'm asking the blokes here cos its a mans job barbecuing.

What I do if I'm just barbecuing is I don't bother putting the lid on at all, just wait for the charcoal to stop flaming and stick the meat on.

If I'm doing a roast I let it fire up with the charcoal burning strongly then put the lid on with the bottom and top vents open. The charcoal should be either side of the kettle with no charcoal under the meat.

i suppose the trick is to get enough coals in before ya start eh, cos ya cannot get any more in once ya start. Its lookin OK though for my first attempt.

the kids are getting the first grub off it so if there's owt wrong I'll be arlreet!!

Another thing, whatever you do when that lid does go on, to roast or when you have finished (to preserve the unburned charcoal) it gets ****ing hot. don't let any kids or adults for that matter touch it, particularly the little slider that controls the vents. I virtually guartantee when you are roasting you'll touch that, it actually removes your fingerprint.

My baked potatoes turned out just right, crisp skins, etc, shame these aussie taties are shit.
All four were bad inside. aaaarrrrgggghhhhhh
