Really envy all of you in Dubai during Ramadan. Here in Riyadh, the food shops are all shut throughout the day. There is absolutely nowhere to go if you don't fast. Even water!

Once you have your work visa, then most of the battle is won.
You simply need to get the iqama stamped on your passport at the Saudi embassy here - and then just board the flight whenever.

I think you need a company as a sponsor or guarantor - to show proof of employment and cash flow. You can certainly apply on your own though.
