Be very, very wary of buying with the idea of "improvement". If the architect is local (and honest) they will know the likely restrictions on rebuilding - if not,...

I think you need to check out the rest of the country, Portugal is not the Algarve. What you say may be true of your area and moreso if it's a "tourist" restaurant, but it's not true elsewhere.

Well, that'll be your opinion. I like a good sauce, but I also know they developed to mask/enhance the use of less-than-perfect ingredients - like chantilly was developed to overcome the sour taste...
