I would think you can do all or most of that in Bali if you get off the beaten track (just guessing, I'm not what you'd call athletic). And in a fair few other SEA locations.
However I would advise sticking to NZ or perhaps QLD (bit warmer than NZ!) - somewhere you know the industries are regulated and safety is a priority. As opposed to, say, Laos.

You are suffering from paralysis by analysis, just pick a place you want to go. Check that you are avoiding the major hurricane/monsoon/drought/civil war season, then pack your bags
