I'd love a bacon sarnie right now!
But I do have a friend coming out from Ireland in May and she's been told to bring me loads and loads of bacon .... and a couple of ham joints !

Well you can get "pancetta" but that is mostly sold already diced and cubed for pasta sauces. If you get it sliced, the slices are very narrow and transparently thin. Hard to make a bacon sarnie from.
There isn't anything like our bacon. I did once ask a butcher why. The pigs apparently are chopped up in different ways to make the huge hams, salami etc.
Roll on May. Friend is also bringing t-bags and salad cream.

years ago you couldn't get pork here, I used to freeze bacon in the UK, take it out the freezer the morning of my flight, wrap it in newspaper, put it in the suitcase and it would still be frozen when it got here

My firend gets it vaccuum packed the morning of her flight. That way I can open a packet while she's here and I can freeze the rest for when I get a craving months later.
The big problem is knowing it's in the freezer. It's hard to leave it there and make it last !
