Default Nouvelle-Calédonie ou Polynésie-Française?

I'm looking to go on a holiday for a few months to improve my French. I currently live in New Zealand, moving back to the UK in the next year, so at the moment the South Pacific is the logical choice to visit. In order to fund my stay, I may have to work. Are New Caledonia and Tahiti part of the EU, and thus with no work restrictions for my British passport, or will I need a visa? If I need a visa I will likely flag it all together and go to France in a couple of years.

Also can anyone tell me about life in either of these places? What is it like to live and work, and what sort of things do I need to take care of pre-departure...
