Default TREES SHEDING THEIR LEAVES

I come from a state where the four seasons are very well defined. Our deciduous trees begin shedding their leaves at the beginning or middle of October. By the end of November, no leaf is left. Does this biological phenomenon also happen in Central Portugal as well? I have seen what looks like Mediterranean palm trees in Coimbra and the area around Penela and Tomar, do they shed their leaves too? Are the winters in Central Portugal colder than in the Algarve? Or about the same temperature? I have been in the Algarve a few times in December, but never so trees with no leaves. O maybe I didn't notice. Thank you for your information.
