A friend of mine got a year's sabbatical to travel the world from her (large German) company. Announced she wanted to resign, explained why, and they offered her a sabbatical instead if she promised to come back afterwards (nothing contractual, just a handshake). It comes down to whether the company want you back badly enough or not, I suspect. She went back at the end of the year, and everyone was happy.

Others can correct me if I'm wrong but I'm pretty sure you need to be here in the UAE for the visa to be issued as you have to go through medical and other bureaucratic procedures which have to be done here. Most people (everybody?) enter the country on a visit visa and start work (though this is technically illegal everybody does it).
There is a visa called "employment visa" which could be issued by the employer for any potential employee staying outside UAE, later one "and after entering UAE and fulfilling the other steps" this visa it will be converted to a residency visa.

i have heard so many stories of one offered and signing and then offers and contracts withdrawn after resigning.
Unfortunately, this is possible, especially if your employment contract has any "probation period" clause, there will be not much to do to legally oblige them with what they had signed "It is not really recommended to start chasing them at the court for several months"
I would say that the best way is to write down the date of starting your employment in the job offer "and the employment contract if possible", this will provide clarity for both the employer and the employee.
