The best greeting for any UAE national is not to greet at all.....remember you are an expat a 2nd rated citizen in their country
Never a truer word said than in jest, all lot of people have rubbished this advice, but this is important advice. Outside of work in any Middle East country stay well away from the locals. There will of course be some exceptions to this rule but better safe than sorry

Other than that

Don't swear in public or spit
always keep your shoulders and knees covered unless at the swimming pool or beach
don't talk to the local women unless its in work, in fact don't even get caught looking at a local woman
don't talk about Darwin's theory of evolution (its goes against the teachings of the Quran)
Take a taxi from pub to pub don't walk, especially in Abu Dhabi (never walk in Abu Dhabi), If in Dubai you can walk if its a short distance as long as you can walk in a straight line, but don't speak to anyone even if you are lost and are only going to ask directions, just take the next taxi
