Holiday Hotel
Hi,
I'm meeting my wife for a few days in Dubai in March.
We are looking for a hotel which will give us a chance to use the beach, has a pool area, is close enough to the hub to eat out at night and doesn't cost a fortune...
Any advice?
Thanks.

Hotels on The Walk may suit you but, if I were you, I would pick a hotel with its own beach because, in my opinion, the public/open beach at The Walk is dreadful and, if you want to hire a sunbed and umbrella it will cost around £50 for the two of you for a day. If you google ‘hotels on the walk, dubai’ it will bring up a host of options.

Tripadvisor Dubai forum is much better for these kinds of questions. More activity over there.
There's no hub in Dubai. There are multiple ones. But I suppose Marina comes close enough, although they have the worst beaches in Dubai, even the hotel ones.
Palm hotels can offer great deals at the right time of year but F&B is expensive and it's also a long and expensive taxi ride to the mainland if you fancy going elsewhere for more reasonable food and drinks.
Some of the mainland hotels have twin hotels on beaches and allow guests to use them and offer shuttles.

We’ve used the Westin Mina Seyahi, which very nice, likewise Le Meridian beach resort, both have decent pools and own beaches.

With your stipulations you are not going to find one for cheap.
My mother and sister stayed in the Sofatel on the Palm last time and that had all the things you require although it is on the palm and so would require a taxi ride to get elsewhere. It's much nicer than the Atlantis too.
