When the time comes to submit anything, your marriage certificate will prove that you're married.

I have copies of every receipt, tickets to days out, boarding passes from our holidays, my birth certificates (long and short), 4 passport sized photos, National insurance number, driving licence, old expired passports, permits and passes to national parks, car hire receipts with both our names on them from various locations, 1000's of photographs, E-mails to each other, facebook screenshots etc, screenshots of our calls made to each via whatsapp and skype, photocopies of postcards she has sent me, bank statements, florist receipts, hair salon reciepts, and engagements ring receipt and insurance documentation.
Nothing that happened prior to the marriage is relevant. You're not required to demonstrate an ongoing relationship. You're required to demonstrate a bona fide marital relationship - so the only evidence that's relevant is from the date of the marriage onward.

I also need advice on how to submit all of this evidence so its practical and organised!
It doesn't really matter how it's organized - although people are always anxious about it... but, it doesn't matter.

What do I need to gather together from my side (UK) as the beneficiary to the petition?

The only thing we have never had is property leases or a joint bank account due to us not finding it necessary.

There is so much, I also need advice on how to submit all of this evidence so its practical and organised!
Congratulations on your engagement!

You've clearly given lots of thought into the upcoming steps. I'm excited for you that you'll be able to marry and file the I-130 so quickly!

Rene and Ian have given you good advice (of course). Take a deep breath and put down most of those things you've collected. The instructions will tell you precisely what you need, and while it's good to have more than is necessary, you've gone a bit overboard. My husband and I included a few photographs, some affidavits from relatives, evidence of a few trips back and forth, and honestly not much more than that. Like you, we didn't (still don't) have any joint finances whatsoever, but it didn't cause any issue for the I-130 petition.

There are instructions, too, on how to collate everything for the package.

Just keep reading! Stay on this forum, read everything you possibly can about marriage-based visas, familiarise yourself with the wiki and you'll soon see the blinkers come off and it'll all become a bit more simple.

Good luck, and I wish you a wonderful wedding day.
