Complete and utter crap. After 2 years once your conditions are removed you're free to get divorced without risk of deportation, let alone leave the country.
Even within the 2 years of conditional residence you can get divorced and in many cases still have your conditions removed, even without the spousal engagement.

I'm talking to someone at the moment who is recommending waiting a couple of years after my GC is granted before visiting the UK again. Otherwise, USCIS might call into question the legitimacy of my marriage and GC etc. and may revoke my GC. This is the first time I've heard of this - has anyone else heard of this before?

I wouldn't talk with this person about anything to do with immigration ever again. First off he is not doing any marriage-based and second, he is giving you erroneous information.

I should clarify, he said they'd abolished it in January... But yeah, I was suspicious.

Although it was mentioned earlier in the thread, my medical had been expired for quite a significant time when my AOS interview rolled round... It wasn't even mentioned in the interview.

Because your medical was done as part of your K-1 visa it has different rules to those done specifically for AOS. I just had a weird experience.

Sadly I haven’t either. I did raise a service request back in late April but of course got absolutely 0 response. I have filled in the form to send to my congressman, but haven’t got round to sending it yet. I currently have an L1 which allows me to work so thankfully I’m not quite so dependent, but it is pretty stressful hearing absolute zip.
