Alright...back from our honeymoon, responding to RFE
So I got an RFE a couple of weeks back, right before I went on my honeymoon to California and the South West of the USA (awesome time) - I posted briefly about it whilst I was away, but getting back it's pretty much what I thought it was - a dumb mistake on my part on the I-864. They're requesting a new I-864 filled by our joint sponsor, the last years federal tax return and all supporting documents and a photocopy of his proof of US citizenship - so a couple of questions;
1) Should I re-do the entire I-864 package? IE the I-864, 3 years federal tax returns, letter of employment and pay stubs - or ONLY what they requested? I've read conflicting things on this and really don't wanna screw it up
2) They requested federal tax returns and all supporting evidence, however IRS tax transcripts are preferred from what I hear - and this encompasses everything they need. Can I use these instead?
3) Should I include a cover letter on the RFE response?

Since they requested a new I-864 from your joint sponsor then that is what I would give them, not a jacked up old one, but a newly completed one.
IRS generated tax transcripts is perfect to use instead of copies of submitted tax forms the joint sponsor filed with IRS. You need supporting documentation for the IRS form only if you are sending a copy of the submission by the filer. If you are sending the transcript, then it is not needed as the tax transcripts are the official IRS proof of submission which includes a synopsis of all that was submitted as proof of income. The JS can include a copy of their birth certificate or passport as proof of citizenship.
If you have copies of the joint sponsor's previous submission for the I-864, then include it. Can't hurt.
Personally, I would not include a cover letter but most definitely include the letter that they sent you and perhaps a little handwritten note on the bottom: Attached are the documents as per your request.

I'll try and expedite my EAD again, the first expedite failed because I hadn't had biometrics done, the second one failed because I got an RFE - third time lucky?!
