France, Spain, Portugal, Italy, Switzerland, Austria, Luxembourg, Belgium, Netherlands, Germany, do England, Wales & Scotland count? If so, 14 out of 28 (although I thought there were more than 28 European countries......???).

I've lived in France and Germany and visited Spain, Portugal (Madeira), the Netherlands, Luxembourg, Sweden, Finland, Estonia, Latvia, Lithuania, Italy, Austria, the Czech Republic and Switzerland.

Tied with Shard at 15/28.

Edit: Non-EU/Swiss European countries: Guernsey, Liechtenstein, Iceland with a trip to Belarus upcoming.

OP states EU + Switzerland so 28 countries (excluding the UK presumably).

Not many. France, Belgium, Denmark, Germany, Switzerland, Austria, Italy, Spain but only Ibiza, Netherlands, Ireland. I've seen Sweden from Denmark does that count?
Oh and Scotland and Wales, do we include the Channel Islands too?

Austria, Belgium, Cyprus, Czech Rep, France, Germany, Greece, Italy, Liechtenstein, Luxembourg (travelled through), Monaco, Netherlands, Russia (Soviet Union, Moscow & Leningrad then), Spain, Switzerland.

I'm using the EU 28 less UK but plus Switzerland as a definition. In theory it could be extended to a few more, but I prefer to exclude Turkey (despite having visited there).

FR, DE (both DDR and GDR), BE, NL, Luxemburg(, Poland, PT, ES, Czech R., Slovakia, Slovenia, Croatia, Greece, Italy, CH, Sweden, Norway, Eire, Austria, Switzerland, Andorra, Monaco, Iceland, Latvia (do Turkey and Israel count?) UK.

I've likely missed one or two.

Ah, then some of mine don't count.

I think you should include the non-EU EEA countries so that we can still play this game next year and then I could add Greenland too.
