I have received approval in princple and wish to do correspondence courses and get a
work permit.

for the student authorization: Will I still need a letter from an educational institution
saying what I am studying etc etc or can I, like a work permit, request an open student
authorization which allows me to do any studies I wish to do?

Basically all student authorizations are "open" for the same level of study. Submit your
acceptance letter with with your request and fee and specify that you wish an open
authorization.
