Re: Air Still
3000 HUF/liter is a standard price here in the village for apple, grape or plum spirit - depends also on the strength.
Many Hungarians like it at more than 50% - while in Germany e g even Whiskys have been watered down to 37,5%!
I'm lucky to get strong Rum at 54% for my "Rumpot" there - tried it with strong pálinka, but it doesn't work, doesn't taste the same ...

Tiger, it's a way to use all the fruit that's too much or too complicated to freeze or make a jam off, especially cherries and sour cherries and all kinds of berries (strawberry, raspberry, blackberry, black and red currant ...).
The good news: You don't have to de-core the cherries, the cores add to the taste - though you have to be careful when eating them of course ...
The recipee is simple:
Yoou add sugar to the cleaned (and washed ...) fruit, around 1kilo sugar for 2 kilos fruit and after an hour or so you fill up with strong rum so the fruit is covered.
It has to be 54% at least - regular rum (or other spirits) at 40% e g will not keep the fruit from frmenting and spoiling!
You can use pots or large glass jars- those 4 l jars are ok.
More info on the net probably.

We have a rumtopf but forget about it every year. We did it once and it did taste good that Christmas. Must remember to dig it out this spring.
