Won`t be cheap, but off-hand these are the only ones I can think of for a short term rental. They have their own bathrooms, small kitchen and it`s downtown Moncton more or less (on bus routes, shops, malls etc).

I would recommend somewhere central so you can walk around while getting your papers (SIN, Driving licence etc). I'm afraid regarding recommendations I cannot offer any actual places to stay because I live in Fredericton. A much nicer city overall and you don't need to be bilingual to get a career (lets see who bites first)
