Well we are certainly putting plans together to stay- husband has done one exam, one exam to go. We'll apply for PR with Express Entry in January. I miss home, but with a new dog and a new baby on way it feels we have moved life on that we will never "go back" even if we do go home if you see what I mean

I'll point out again, and as I said earlier, the thread was to generate ideas for possible locations for my wife and I to research, based on peoples preferences / opinion on what would be their ideal place to live...
The way the question is worded, I don't feel there should be a need to know things like "so you will be the main breadwinner"... "are you male or female"
True, expat CAN be a great source of information as you pointed out. But I am sure you also know, some 'members' cant help but 'do' sarcastic , patronising and negative. But hey, Im big and ugly enough to take it.

For the vast majority of wannabe immigrants to Canada (even those holding PR already), this approach rarely works (sometimes but rarely). Unless you think I'm prying, it might help to focus your original question if you explained what your profession is and why you think you'd be viewed as outstanding compared to Canadians at your level.

OP, you are dreaming surely?
Think of it in terms of a Canadian or someone from another country outside of the EU trying to find a job first before emigrating to the UK
Why do you believe a Canadian employer in Ontario would hire you or your spouse over a local qualified person that has the same qualifications & experience?
Add to that the many immigrants as well as Canadians here currently unemployed.
Unless you or your spouse have something unique that a local candidate doesn't have, I would not consider to or invite you over the pond for an interview never mind hiring you.

Why do you want to leave the UK to come to Canada, why not some place else - have you applied to emigrate anywhere else - if so, what were the results?
Other than vacations, have you or your spouse traveled much or worked for extended periods outside the UK?
How do you or your spouse feel about leaving any friends or relatives behind in the UK or wherever they're scattered?
If you have PR to come to Canada, why is it now (or is it just now) that you are trying or looking in deciding to pick the place to live [Ontario for this thread], other provinces from your other posts?
Have you been to Canada & done the recce, if so, when & how many times?
What do you know about Canada other than what a bunch of half wit Brit expats living here post about?

To cut a long story short, the winters are too long and there is a lack of choice. After 9 years we are ready to move along, but we are taking our time about it.

I don't know about that. Guelph, for the little I'm there on my own time, seems like a pleasant enough small town. It has a university and all that entails. It's a lot like Madison, WI or East Lansing MI. There's no touchdown Jesus but, in every other way, it's better than South Bend, IN.
Toronto has more restaurants and it has the St. Lawrence Market so, if you're an eating kind of person Toronto's better. Neither is going to set one's heart on fire; we're not talking Brightonian levels of excitement here, maybe we're talking Bournemouth.

I'd go back to Whitby, Port Hope or Cobourg. I liked all 3 during my short stint living in Ontario.

We have just returned from our recce and are pretty much settled on the Caledon region. Possibly Erin / Guelph also. We will be working from home with possible meetings downtown once or twice a week so the commute is not a daily issue for us.
More space, bigger properties, small town living all appeal.
We did look at Oakville etc. Lovely if you can afford the waterfront but you are talking $millons. But we don't have that budget so too built up for us.

The recruitment process in Canada typically follows the below route:
1. Do we have a friend who can do it vaguely competently?
2. Do we have a friend of a friend who can do it vaguely competently?
3. Is there a local who has been doing the same job locally for 7 years vaguely competently?
4. Get HR to advertise and see who responds.
5. Get HR to advertise a second time and see who responds because we forgot we had told them to do it the first time.
6. Look at their resumes for companies we've heard of. Skill sets not necessary if it's a company we've heard of we may know someone who knows them.
7. Interview everyone 3 or 4 times over a two month period convenient to ourselves.
8. Offer the job to 3 or 4 people on the way to keep them excited and also frustrate them as they know we hold the cards.
9. Finally hire but when you do throw out an offer that is $10 to $20k below what the person asked for.
10. Sack off person because they are unhappy with our cheap negotiation tactic of lowballing them on what we told them the role paid at the beginning of the process. Perform same cheap tactic with the other 2 offers.
11. Sap has taken job but we've taken so long we actually realise we no longer need it filled we need something else now. Revert to point 1.

I'm sure there are many that could equate to that, then others just seem to fall into place & muck in, settled, jobs, nice house, neighbourhood, kids in school .... never an issue?
