even with a UK degree in Mechanical Engineering, or whatever your qualification is, there are issues with getting licensed as a Professional Engineer, finding work in your field that will pay the bills. No different than any other new immigrant.
First though you need to see if you qualify to get to Canada to live, work & play. Have you explored those requirements yet?
As a newly qualified degreed Engineer, it'll take minimumk 3 years in Canada to get licensed.
In the meantime, should you get to Canada, you will be unable to use the term Engineer until you get licensed

Admittedly, at this point the whole thing is just a dream, but I've contacted a migration consultant (don't know if I'm allowed to name companies???) who has said myself and my fiancé would qualify, but I haven't started any process just yet, I'm still in the research stage.
It seems now the main goal will be the licence...

Never mind naming it probably look at other consultants not that in most cases they are required.

Have they said what visa route they'd suggest for you? A common thing from the less scrupulous consultants is for them to tell you you'd qualify under Express Entry, which you may well do, but to not tell you that if you have a CRS score of less than approx 450-480 you've got very little chance of getting PR anyway. They then take your money as you're 'eligible', safe in the knowledge that they'll never actually have to do your PR app as you will just sit in the pool with no chance. So if that's the route they're suggesting, have a look at your score yourself and make sure it's definitely a viable route for you.
Very few on the forums use consultants, so unless you feel a strong need to, you can just do it yourself as its all pretty straightforward.

Tbh the whole thing seems like a bit of a mountain to climb. Ask ten different ppl and get ten different answers kind of thing.
I'm going to take your advice and do more research. I'm gonna find out the exact list of jobs I need to work through and write them down in a step by step model and just work my way through it all.
The main worry for me (apart from actually getting a visa) is getting accommodation and a job sorted. Which is NOT going to be easy.

Our Canada post letter carrier (postal delivery woman in her 40's) does a lot of double route deliveries. Starts at 6am & is done by 3-ish. Real good at what she does, fast on her feet, doesn't mess around, athletic type.
Banks some of that double duty, takes some of it in extra pay.
Last year she made over $100k gross & banked an additional 34 days vacation on top of the 5 weeks she already gets.

It's really not a mountain to climb *if* you are definitely likely to get PR via EE. Then you simply take your IELTS, get your ECA, and submit your profile online (no huge 'list of jobs' just yet!). Wait until you're invited to apply for PR and then you have lots more documents to submit, but although it's slightly onerous gathering them it's not usually difficult. You'd have to do that yourself anyway, no consultant can get things like employment refs on your behalf usually. As for 10 different answers, you're simply asking the wrong people! Only take official info as facts, so the CIC website is the place to go (and BE of course!).
But all of this is moot if you don't score enough on the CRS to be invited to apply for PR, so that's your first step. If you don't, then it may become more of a mountain to climb but hopefully Migrate Me are right and you would get PP via EE.
