Yes, my research is showing that Ireland is a good option for many - if you are white, English-speaking and were born in the UK or an ex-colony of the UK, there is a good chance that you have some Irish in you!
Ireland allows for a grandparent born on the island of Ireland (an important distinction) as a basis for a claim for citizenship - and as long as you have all the documents they require and pay the fee, seems pretty straightforward
But interestingly, they also allow for a claim based on a great-grandparent under certain circumstances

Re Spanish citizenship, they don't allow dual citizenship unless it's Iberoamerican/Filippino. So you will have to give up your UK citizenship if you wannabe a Spaniard.
