Maybe that refers to the UMTS/HSDPA ?

But I know nothing about these phones. The ones that are wired in are much easier to understand

Ah, yes that refers to UMTS/HSDPA, or 3G. In that case, the iPhone would drop back to the GSM network. Most manufacturers will do 2 versions of their handsets, like Sony Ericsson who have a HSDPA 900/2100 version, and then a HSDPA 850/1900/2100 version.

Apple do not, they only have 1 handset for the whole world.

That they won't work on a 2100Mhz radio frequency. They don't have a 2100Mhz receiver/transmitter, but they do have a 900Mhz capability.
